Abstract
Celem badania była ocena wpływu dodatku suszonych liści bylicy pospolitej na wybrane cechy jakościowe i bezpieczeństwo mikrobiologiczne pulpetów drobiowych. Badano dwa warianty mielonych produktów drobiowych z udziałem suszonych liści bylicy pospolitej (grupa B 1 – 0,50% i grupa B2 – 1%). Grupę kontrolną (K) stanowiły produkty bez udziału bylicy pospolitej. Ocenę jakości pulpetów przeprowadzono na podstawie pomiaru pH, barwy, siły cięcia, oceny organoleptycznej i mikrobiologicznej. Dodatek bylicy pospolitej spowodował wzrost kwasowości pulpetów, wpłynął na pociemnienie produktu (spadek parametru L*), zmniejszenie udziału barwy czerwonej (a*) i żółtej (b*). Ocena organoleptyczna wykazała, że dodatek 0,50% bylicy pospolitej do mielonych produktów drobiowych wpłynął korzystnie na natężenie i pożądalność smaku oraz ogólną pożądalność. Po przechowywaniu chłodniczym produkty wykazywały podobne tendencje zmian jakości i były bezpieczne mikrobiologicznie.
The aim of this study was to evaluate the effect of the addition of dried mugwort leaves on selected quality characteristics and microbiological safety of poultry meatballs. Two variants of ground poultry products with the addition of dried mugwort leaves were studied (group B 1 – 0.50% and group B2 – 1%). The control group (K) consisted of products without the participation of common mugwort. The quality of the meatballs was assessed based on pH, colour, shear force, organoleptic and microbiological evaluation. The addition of mugwort increased the acidity of the meatballs, affected the darkening of the product (L*), reduced their redness (a*) and yellowness (b*). Sensory evaluation showed that the addition of 0.50% mugwort to the ground poultry products had a positive effect on the intensity and desirability of the flavour and overall desirability. After refrigerated storage, the products showed similar trends in quality changes and were microbiologically safe.
