Abstrakt
Celem badań była ocena wykorzystania oleju z pestek z dyni i soku z cytryn jako marynaty do mięsa drobiowego. Oceniono parametry jakościowe produktów marynowanych pod względem cech fizycznych (wchłanianie marynaty, pH, barwa, siła ścinająca), bezpieczeństwa mikrobiologicznego, wydajności produktu oraz cech sensorycznych. Badanie wykazało, że mieszanina oleju z pestek dyni i soku z cytryn może być stosowana jako kwasowa marynata do mięsa drobiowego pozwalająca na uzyskanie bezpiecznego produktu. Powoduje ona poprawę kruchości zarówno surowego marynowanego mięsa, jak i produktu po obróbce termicznej. W ocenie organoleptycznej gotowe produkty niezależnie od grupy badawczej uzyskały akceptację zespołu oceniającego. Najwyższe noty za smak, natężenie zapachu i wygląd ogólny uzyskały produkty marynowane w marynacie o 70% udziale oleju z pestek dyni i 20% zawartości soku z cytryn. Mieszanina tłoczonego oleju z pestek dyni i soku z cytryn jako marynata do mięsa z piersi kurcząt brojlerów może spełniać oczekiwania konsumentów dotyczące wykorzystania naturalnych dodatków do żywności.
The aim of the study was to assess the use of pumpkin seed oil and lemon juice as a marinade for poultry meat. The quality parameters of marinated products were assessed in terms of physical characteristics (marinade absorption, pH, colour, shear force), microbiological safety, product efficiency and sensory characteristics. The study showed that a mixture of pumpkin seed oil and lemon juice can be used as an acidic marinade for poultry meat, allowing for obtaining a safe product. It improves the tenderness of both raw marinated meat and the product after heat treatment. In the organoleptic assessment, the finished products were accepted by the evaluation team regardless of the research group. The highest scores for taste, intensity of smell and general appearance were obtained by products marinated in a marinade with a 70% share of pumpkin seed oil and 20% of lemon juice. A mixture of pressed pumpkin seed oil and lemon juice as a marinade for broiler chicken breast meat may meet consumer expectations regarding the use of natural food additives.
