Abstrakt
Gruszki (owoce gruszy, Pyrus communis) należą do najważniejszych owoców produkowanych w Europie Środkowej, w tym w Polsce, o cennych właściwościach odżywczych i dużym potencjale biologicznym. Celem pracy było zbadanie wpływu wybranych metod utrwalania (suszenie, liofilizacja) na zawartość związków fenolowych oraz potencjał przeciwutleniający owoców gruszy (3 odmiany), a także możliwość wzbogacenia w antyoksydanty poprzez zastosowanie przed suszeniem moczenia w ekstrakcie propolisu. Zawartość związków fenolowych ogółem kształtowała się w przedziale 87 – 266 mg GAE/100 s.m., po utrwalaniu wartości te uległy obniżeniu o 8,25 – 22,87%, podobnie jak aktywność antyoksydacyjna mierzona metodami FRAP i DPPH. Uzyskane wyniki wskazują, że liofilizacja pozwala na lepsze zachowanie właściwości prozdrowotnych owoców. Zastosowanie ekstraktu propolisu do wzbogacenia owoców odmiany Lukasówka przed suszeniem pozwoliło osiągnąć istotne wzmocnienie oznaczanych parametrów (wzrost od 17 do 40%), co potencjlanie wskazuje na wyższą wartość prozdrowotną otrzymanych owoców, a jednocześnie stanowi metodę wprowadzenia propolisu do diety.
Pears (Pear fruit, Pyrus communis) are among the most important fruits produced in Central Europe, including Poland, with valuable nutritional properties and high biological potential. The aim of the study was to investigate the effect of selected preservation methods (drying, freeze-drying) on the content of phenolic compounds and the antioxidant potential of pear fruit (3 varieties) and the possibility of enriching them with antioxidants by soaking in propolis extract before drying. The content of total phenolic compounds ranged from 87.56 to 266.46 mg GAE/100 d.m. After preservation, these values decreased by 8.25–22.87%, as did the antioxidant activity, measured by FRAP and DPPH methods. The results obtained indicate that freeze-drying allows for better preservation of the health-promoting properties of the fruit. The use of propolis extract to enrich the fruit of the Lukasówka variety before drying allowed for a significant enhancement of the determined parameters (increase from 17 to 40%), which indicates a higher health -promoting value of the obtained fruit and, at the same time, constitutes a method of introducing propolis into the diet.
