Abstrakt
W pracy omówiono innowacyjne zastosowanie chmielenia na zimno w produkcji win z owoców tropikalnych: banana, mandarynki, pomarańczy i limonki. Zwiększenie w nich zawartości polifenoli i podniesienie właściwości przeciwutleniających uzyskano poprzez dodatek chmielu Magnum i Enigma w dwóch dawkach. Badania wykazały, że chmielenie – szczególnie odmianą Enigma – poprawiało właściwości antyoksydacyjne i sensoryczne win mandarynkowych i pomarańczowo-limonkowych, natomiast pogarszało wygląd i klarowność win bananowych. Efekty zależały od rodzaju owocu, dawki i odmiany chmielu. Wyniki wskazują, że chmielenie może być skutecznym sposobem wzbogacania win owocowych w związki bioaktywne i poprawy ich właściwości sensorycznych, co czyni je obiecującą propozycją na rynku napojów funkcjonalnych.
The article discusses the innovative use of cold hopping in the production of wines made from tropical fruits: banana, tangerine, orange and lime. The goal was to increase polyphenol content and antioxidant properties by adding Magnum and Enigma hops in two doses. The study showed that hopping – especially with the Enigma variety – improved the antioxidant and sensory properties of tangerine and orange-lime wines, while it worsened the appearance and clarity in banana wines. The effects depended on the type of fruit, dosage and variety of hops. The results indicate that hopping can be an effective way to enrich fruit wines with bioactive compounds and improve their sensory properties, making it a promising proposition in the functional beverage market.
